Canary Goat Cheese

The Canary Islands boast a large range of cheeses, mainly made from goat milk, which enjoy international recognition and have been the object of several awards.

These Canary Islands Goat cheeses are made from pasteurized goat milk and come from the island of Gran Canaria. Once the wheels reach the perfect degree of ripeness and creaminess, each piece is washed with oil and then, depending on the variety, the cheese is either left in its natural form or one of the following ingredients are spread on the rind: gofio (an ancient Canary Islands meal made with roasted maize) or paprika; otherwise the cheeses are smoked with almond shells.

The semi-cured versions are matured for a minimum of 30 days, while the cured ones for over 105 days in their larger formats. The old cheeses are ripened for over 270 days.

Smooth, sweet and creamy, these goat cheeses are very versatile in cuisine and are ideal as a starter, diced in salads or into soups; they pair well with full-bodied wines.
