Casa Mendevil Velho
Casa Mendevil cheese is produced in Minho, in the northeast region of Portugal. It is made from pasteurized cow milk cheese, coagulated with animal rennet and has a linen band wrapped around its square shape.
The texture of the aged version of this cheese (“velho” means old in Portuguese) is semi-hard and it is matured for over 90 days. Casa Mendevil melts in the mouth and is rather fruity with an intense grassy-musty flavor. The red colored crust is the result of washing the rind with sweet red pepper and extra virgin olive oil.
