Pasteurized goat’s milk cheese – olakiss
This dairy produced the cheese with the milk from their own cattle. the milk comes only from the local málaga goat breed that graze freely.
Here the goats feed on broom, thyme, acorn, wild hay and olive leaves, all typical from jaén area. all these flavors and aromas are transferred to the milk providing our cheeses with a unique flavor.
It is the oldest fermentation process; it is made with the lactic bacteria present in milk. this type of bacteria acts on lactose (milk sugar) and breaks it down to lactic acid. in these cheeses, the drainage (the loss of part of the whey contained in the milk) occurs spontaneously.
