This soft-ripened sheep cheese from the mountainous area of Miraflores, in Madrid, is covered in a silky white mold. It is produced with milk collected in nearby farms and is all-natural, with no preservatives.
The texture is extremely creamy like a Brie cheese. The sheep milk flavor is balanced and delicate though long-lasting with an aftertaste of mushrooms and nuts. It is mild when young growing creamier with a more developed taste when aged.
